Wild oysters_Netherlands

For the job I visit a lot of professional food fairs to check out new products, ingredients and dishes. I always try to find the real craftsmen who are responsible for the great food on the different stands. The goal is to find good stories that reflect the ‘zeitgeist’ of today. At the latest Tavola fair I bumped into Jan en Barbara Geertsema-Rodenburg, a cute couple  who presented their uber-fresh, handpicked oysters in the Waddenzee. The oysters tasted mild, natural & salty and super fresh (as I hoped for) but what really made me fall in love with this brand is the absolute fantastic packaging of the oysters. That mermaid!!! Red haired, topless and a lovely green fishtail, in unspoiled fisher men tattoo style. I love it. I could not resist to buy The original Wild Wad Oyster T-shirt and it became one of my favorites. Artisanal fishermen harvest Wild Wad Oysters on wild oyster banks in the Wadden Sea. They are Pacific oysters (Crassostrea gigas), a species used by oyster farms all around the …

Huel up your body!

Being professionaly focusing on food trends and all kind of food related innovations, sometimes you discover a new kind of food product that asks further investigation. Let me introduce Huel, a brand new food replacement in the market. I was in London when the team behind Huel give me some samples of their product: a white attractive, ûber neutral pouch, very low but strong branding in a black Helvetica typo and  the product itself has a velvety powder-ish feeling.     What is this Huel hype all about? Well, Huel is a nutritionally complete powdered food that contains all the proteins, carbs, and fats you need, plus at least 100% of the European Union’s “Daily Recommended Amounts” of all 26 essential vitamins and minerals . It’s been formulated by a renowned nutrition expert James Collier who has 25 years of experience working in nutrition and dietetics, so not a rookie would I think. Huel is 100% vegan (better for the environment and animals), super convenient, high in protein (148g per 2000 calories) and fibre (35g), contains just 4.6 grams of sugar per 2000 calories (no …

Tried & enjoyed, Restaurant Café Modern Amsterdam.

As I need to be in Amsterdam for my job (creative direction for fashion shoots), I find it always challenging to dine in good food restaurants. This can be the hot spot of the moment, or a hidden treasure known by some locals, or a classic frequented by quality seekers. If Elle/harpers Bazaar/Vogue fashion photographer Wendelien Daan (who likes good food as much as I do) and later Maarten van de Vijfeijken (Founder of creative studio “Goed stel mensen”) both recommended me Café Modern, than I did what needs to be don, I booked a table. Café Modern is situated near Amsterdam North and is from the same team that brought us Hotel de Goudfazant. (not an hotel, but a great restaurant in an industrial car park). Café Modern nested in an old bank building and has a feeling of a school refter, or a canteen of a 60 ties government house. You still find the vaults of the bank, as they are turned into a toilet area in the cellar. There is only one …
