At StockmanVerstraete we spotted this trend all ready a while ago: breakfast, as one of the main eating moment of the day, is getting more and more important in people’s life.
People always loved breakfast, they sure do. But that’s not what this trend is all about.
The game changer here is the fact that people start asking to have breakfast all day long and smart inspired entrepreneurs respond to that demand.
Last year I went to New York on a food safari with a client, and I had breakfast at the fab bar Five Leaves in Brooklyn, a tip from my friend Niels, living in the neighbourhood.
All the hippest breakfast dishes of the moment were served here and it was clear that something was going on.
For example I had thick artisan sourdough bread toast, with vegetables and a poached egg and another toast with an entire Asian noodle dish dressed on top of it.
We also had beautiful scrambled eggs with some parmesan cheese and truffle and the obligatory pancakes with maple syrup. In a larger-than-you-can-eat pile off course! All served in large portions, just to keep you going all day long. Breakfast as lunch and as diner, that is the way the Breakfastarians like it.
Another breakfast spot also in Brooklyn, called Egg, confirmed the growing interest in different, mostly savoury breakfast recipes available all day long. In this concept restaurant eggs are the main inspiration for all kind of great dishes to start your day with.
Isabel was travelling along the West Coast this summer. She also had some ‘hard to forget’ breakfast experiences.
From the exquisite croissants at Nuvrei in Portland to the breakfast tacos at My Home State in L.A.
A taste feast and another proof of this growing Breakfastarian wave in the U.S. .
But it’s not only during travel moments, we witnessed the rise of the all-day-breakfast movement. An entire generation of -let’s call them ‘Breakfastarians’- meets each other in hip bars and little cosy restaurants for an entire breakfast/brunch at any moment of the day.
But what kind of breakfast should we imagine, and what are the most popular ones?
Breakfastarians order mostly 4 dishes centered around toast, porridge, yoghurt or eggs, prepared in hundreds of different chefs variations.
1. Toast: artisanal, spelt or sourdough, all bread of very high quality. (The winning combi: toast with the even more hip avocado)
2. Porridge: the living proof of the rise of good proteins!
3. Yoghurt: in any form as long as it’s organic and artisanal made. Think labne, but also he new skirr from Iceland.
4. Eggs: Thanks to Ottolenghi eggs in tomato sauce called shakshuka and toast with bacon & eggs are a bom!
So, that’s it.
Breakfast all day.
Good to know: what we showed you is just the beginning!
